Ingredients

  • 1 cup brown lentils, rinsed
  • 1 onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cups vegetable broth
  • 2 cups kale, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. 1. Sauté onion, carrots, and celery in a large pot with a splash of water until softened.
  2. 2. Add garlic and cumin, cook for 1 minute.
  3. 3. Add lentils and vegetable broth. Bring to a boil, then simmer for 30 minutes.
  4. 4. Stir in kale and cook until wilted. Season with salt and pepper.
