Lentil Vegetable Soup
A hearty, warming soup loaded with protein-rich lentils and seasonal vegetables.

Ingredients
- •1 cup brown lentils, rinsed
- •1 onion, diced
- •3 carrots, chopped
- •3 celery stalks, chopped
- •4 cups vegetable broth
- •2 cups kale, chopped
- •2 cloves garlic, minced
- •1 tsp cumin
- •Salt and pepper to taste
Instructions
- 1. Sauté onion, carrots, and celery in a large pot with a splash of water until softened.
- 2. Add garlic and cumin, cook for 1 minute.
- 3. Add lentils and vegetable broth. Bring to a boil, then simmer for 30 minutes.
- 4. Stir in kale and cook until wilted. Season with salt and pepper.
