Rainbow Buddha Bowl
A vibrant, nutrient-dense bowl packed with colorful vegetables, legumes, and whole grains.

Ingredients
- •1 cup cooked quinoa
- •1 cup chickpeas, roasted
- •1 cup purple cabbage, shredded
- •1 sweet potato, roasted and cubed
- •1 avocado, sliced
- •1 cup cherry tomatoes, halved
- •2 cups mixed greens
- •Lemon tahini dressing
Instructions
- 1. Cook quinoa according to package directions and let cool slightly.
- 2. Roast chickpeas and sweet potato cubes at 400°F for 25 minutes.
- 3. Arrange greens in a bowl and top with quinoa, chickpeas, cabbage, sweet potato, avocado, and tomatoes.
- 4. Drizzle with lemon tahini dressing and serve immediately.
