Ingredients

  • 1 cup cooked quinoa
  • 1 cup chickpeas, roasted
  • 1 cup purple cabbage, shredded
  • 1 sweet potato, roasted and cubed
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 2 cups mixed greens
  • Lemon tahini dressing

Instructions

  1. 1. Cook quinoa according to package directions and let cool slightly.
  2. 2. Roast chickpeas and sweet potato cubes at 400°F for 25 minutes.
  3. 3. Arrange greens in a bowl and top with quinoa, chickpeas, cabbage, sweet potato, avocado, and tomatoes.
  4. 4. Drizzle with lemon tahini dressing and serve immediately.
